Meatballs (great with spaghetti)
Simple beef meatball recipe to add to your favorite marinara sauce
Equipment
- 1 Large mixing bowl
- 1 Cookie sheet lined with parchment paper
Ingredients
- 1/4 cup Italian seasoned breadcrumbs or Panko
- 1/4 cup water, helps tenderize meatballs (some people will use milk)
- 2 lbs ground beef (80-90% lean) or ground turkey (dark meat from butcher)
- 2 eggs
- 1/2 small onion, finely chopped (1/4 of onion ok)
- 1 tbs garlic powder
- 2 tbs dried parsley or marjoram leaves (if fresh, 1 tbs)
- 1/4 cup grated Parmesan
Salt & black pepper to taste, about 2 tsp each (I microwave a small piece to taste and add more salt/pepper if needed)
Instructions
- Preheat oven to 400 degrees F and line baking sheet with parchment paper.
- Mix all ingredients, don't overmix or meatballs will be dense, add more milk or water to keep it lighter, as needed.
- Form round 1 to 1.5 inch meatballs and place onto lined baking sheet.
- Bake for about 15 minutes, more if they arebigger meatballs (or less if meatballs are really small).
- Once meatballs done, simmer in favorite marinara sauce for at least 30 minutes, or let it cool and you can freeze to use later.
Notes
I make a batch of these ahead of time and great before ski season and freeze with or without the sauce for an easy meal that is easy to transport in a cooler.
