Cheesy Quick Bread
Easy side of bread to go with any meal
Equipment
- 1 loaf pan (8 x 4), or if you double the recipe use a casserole/lasagna pan
- 1 Large mixing bowl
- 1 Medium mixing bowl
Ingredients
- 2 cups all purpose flour (you can use 1 cup all purpose and 1 cup almond flour for more protein or 1 cup flour, 3/4 cup almond flour and 1/4 cup oats)
- 4 tsp baking powder
- 1/4 cup avocado oil (you can use any oil- canola, vegetable, butter)
- 1 cup shredded sharp cheddar cheese (or any shredded cheese you have)
- 2 tbs Parmesan cheese (optional but adds nuttiness and extra flavor)
- 1 green onion, finely chopped
- 2 eggs
- 1 cup milk (dairy or non-dairy ok)
- 1/2 cup chopped Canadian bacon, turkey bacon, or smoked ham (optional, I usually add if I have on hand for added flavor)
- 1 tbs garlic powder (optional)
- 1 tbs sugar (optional, I leave out but some like a hint of sweetness to the bread)
Instructions
- Preheat oven 375 degrees F.
- Grease the loaf or casserole pan.
- Stir the dry ingredients in a large bowl, including the cheeses (except for the sugar).
- Stir the wet ingredients in a medium bowl, add the optional sugar.
- Add the wet ingredients to the dry ones. Mix until just incorporated but do not overmix or bread will not rise properly.
- Pour into baking pan and bake immediately for about 40-50 minutes for loaf pan and 35-45 minutes for casserole pan. Ovens vary so bake until lightly golden brown and toothpick or fork comes out clean.
Notes
You can play around with the ingredients and make it your own. I try to have less glutinous flour when I can as they have a higher glycemic index and lower in fiber.
