Chocolate Dipped Almond Flour Biscotti (gluten free, vegan)
This is a great recipe for those who may like the hardness of regular biscotti made from flour. This can have a chewy center if you decrease the second bake time by 10 minutes.
Equipment
- 1 baking pan lined with parchment paper and lightly oil with some cooking oil
- 1 Large mixing bowl
- 1 small mixing bowl, microwavable
- 1 pair of disposable cooking gloves (optional)
Ingredients
Biscotti Dough
- 3.5 cups almond flour
- 4 tbs arrowroot
- 1 cup sugar
- 2 tbs coconut oil, melted
- 4 tbs water, room temperature
- 2 tsp baking powder
- 1.5 tsp almond extract
Chocolate Biscotti Dip
- 1/2 cup dark chocolate chips (Guittard brand preferred)
- 1/2 cup semi-sweet chocolate chips
- 2 tsp coconut oil, melted
- 1/4 cup sliced/chopped almonds, lightly toasted (optional)
Instructions
- Preheat oven to 350 degrees F.
- In large mixing bowl, mix the dry dough ingredients together and whisk to make sure the baking powder is well mixed. Then add the wet dough ingredients into the dry ingredients and knead in the bowl using cooking gloves. It should form a ball (add more water if it's not forming a ball or add a little more almond flour if dough is too wet).
- Form 2 even balls and place them on the prepared baking pan.
- Flatten the 2 balls and shape them into about 8 x 4 inch logs.
- Bake the biscotti logs for about 20 minutes until the log is a light golden brown.
- Let the logs cool and then cut each log into 10-11 even biscotti pieces. The 2 logs should make about 20-22 biscotti pieces.
- Decrease the oven to 275 degrees F.
- Bake the cut biscotti on their side on the baking sheet lined with parchment paper for about 15 minutes (for chewier biscotti) or 20 minutes (for harder biscotti). Will depend on oven so please check often during last few minutes of baking.
- While biscotti is cooling, melt the chocolate and coconut oil for chocolate dip in the microwave, 20 seconds at a time until melted.
- Dip the tips of the biscotti with chocolate and sprinkle with toasted almonds or any other biscotti toppings you make like. Place the dipped biscotti on a rack and let the chocolate set.
