Steamed Egg with Silken Tofu and Braised Minced Meat

This is a traditional Chinese family home dish. Super easy to make and texture is silky and light. Goes well with Jasmine rice and some sauteed veggies.

Equipment

  • 1 Small mixing bowl
  • 1 8 inch baking pan/dish used to steam the dish, lightly oil the bottom and sides (stainless steel, glass, porcelain all ok)
  • 1 steamer
  • 1 saute pan/wok

Ingredients
  

Tofu/Egg Mixture

  • 1 box of silken tofu, slice into 8 rectangular pieces to line baking dish
  • 3 eggs, beaten
  • 1 1/3 cups water

Minced Meat Sauce (to pour over steamed egg/tofu)

  • 1/2 lb minced/ground meat (pork or chicken)- marinate with 2 tsp soy sauce, 1 tsp corn starch, pinch of white pepper
  • 1/4 cup frozen peas or edamame (defrosted)
  • 1 tbs minced garlic
  • 1 tbs cooking oil
  • 1/2 cup water

Gravy Sauce (to cook the mince meat)

  • 2 tsp oyster sauce
  • 2 tsp hoisin sauce
  • 1/2 tsp dark soy sauce
  • 1/2 tsp sesame oil
  • 2 tbs water (mix with 1.5 tsp corn starch to make a slurry to thicken the sauce)

Garnish

  • 1 green scallions, finely chopped

Instructions
 

  • Place the oiled baking pan/dish on the steamer. Then place the sliced silken tofu on the bottom of the oiled dish.
  • In small mixing bowl, scramble the eggs with the water and pour into the pan over the tofu. Put cover over steamer and steam for about 15 minutes.
  • While egg/tofu mixture is steaming, you preheat a saute pan/wok over medium high heat. Saute the marinated minced meat and garlic, add the peas and/or edamame. Then pour 1/2 cup of water into the pan and bring to gentle boil.
  • Then add the gravy sauce to the pan and bring to a gentle boil. Then add the corn starch slurry into the pan until the sauce is thickened a little.
  • When done, pour this over the steamed tofu and egg mixture. You can sprinkle some green scallions over the finished dish. Serve hot with rice.

Notes

You can make your own variation to serve over the egg/tofu mixture.  When you use silken tofu, the entire dish is very smooth.  You can substitute with firmer tofu for a different texture.
