Protein Bites (no bake, gluten free)
Great on the go snack, high in protein, low carbs
Equipment
- 1 Large mixing bowl
- 1 Tupperware or Ziplock to store protein balls
Ingredients
- 1/2 cup creamy almond butter
- 1 cup old fashioned oats
- 1/4 cup flaxseeds (or grounded)
- 1/4 cup chia seeds
- 2 tbs cocoa powder (unsweetened)
- 1/8 cup thinly sliced almonds (raw or toasted)
- 1/8 cup chopped walnut or pecan pieces (raw or toasted)
- 1/8 cup coconut flakes or shredded coconut (unsweetened)
- 2 tbs maple syrup or honey (or you can substitute with some finely chopped dried dates or figs for sweetness)
- 1 tsp vanilla extract
Handful of seeds (pumpkin or sunflower)
Optional: some people add 2 tbs protein powder or dried fruit like cherries, raisins or chopped dry dates or figs
Instructions
- Combine all ingredients in mixing bowl, add more almond butter if more is needed to form balls with mixture. Optional: for a finer texture, you place some of the dry ingredients in a blender or food processor and lightly grind before mixing.
- Form 1-1.5 inch balls and store in airtight container or bag and can be stored in refrigerator for up to 1-2 weeks or longer.
- Optional: you can roll these balls in mini chocolate chips or desiccated coconut powder

This is a very versatile high protein recipe and you can make this your own.
