Almond Flour Oatmeal Cookies

These cookies are light and like how they have a little extra protein. Like most of my recipes, these have already been adjusted to have less sugar.

Equipment

  • 1 Large mixing bowl
  • 1 baking sheet lined with parchment paper

Ingredients
  

  • 1/2 cup butter, room temperature
  • 1/2 cup brown sugar
  • 1/4 cup sugar (optional, I think this is sweet enough without this, original recipe called for 1/2 cup of sugar)
  • 1 egg
  • 1.33 cups almond flour
  • 1.75 cups old fashioned oats
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 tsp almond extract
  • 1 tbs chia seeds (optional)

Instructions
 

  • Preheat oven to 350 degrees F.
  • In large mixing bowl, cream the butter and sugar(s) until fluffy and lighter in color, about 2-3 minutes.
  • Beat in the egg and remaining ingredients.
  • Form 1.5 inch balls and place on the lined baking sheet, and slight flatten them into a disk that is about 1/4 inches thick.
  • Bake for about 10-12 minutes until the edges are light golden brown. The cookies will continue to bake a little on the baking pan once they are out of the oven. Best not to over bake.
