Almond Flour Oatmeal Cookies
These cookies are light and like how they have a little extra protein. Like most of my recipes, these have already been adjusted to have less sugar.
Equipment
- 1 Large mixing bowl
- 1 baking sheet lined with parchment paper
Ingredients
- 1/2 cup butter, room temperature
- 1/2 cup brown sugar
- 1/4 cup sugar (optional, I think this is sweet enough without this, original recipe called for 1/2 cup of sugar)
- 1 egg
- 1.33 cups almond flour
- 1.75 cups old fashioned oats
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 tsp almond extract
- 1 tbs chia seeds (optional)
Instructions
- Preheat oven to 350 degrees F.
- In large mixing bowl, cream the butter and sugar(s) until fluffy and lighter in color, about 2-3 minutes.
- Beat in the egg and remaining ingredients.
- Form 1.5 inch balls and place on the lined baking sheet, and slight flatten them into a disk that is about 1/4 inches thick.
- Bake for about 10-12 minutes until the edges are light golden brown. The cookies will continue to bake a little on the baking pan once they are out of the oven. Best not to over bake.
