Chicken Soup (easy, semi-homemade)

Easy chicken soup when time is limited. Semi-homemade for quick dinner. Add noodles for chicken noodle soup.

Equipment

  • 1 Large pot for soup

Ingredients
  

  • 1 Container of pre-chopped Trader Joe's mirepoix (or you can finely dice 1 small onion, 3 stalks of celery and 1-2 carrots)
  • 1 Package of pre-cooked, sliced chicken breast in refrigerator aisle of Trader Joe's and dice (or shred some rotisserie chicken or sautee a couple chicken breasts and dice)
  • 2 32 oz containers of chicken stock
  • 1/2 cup Egg noodles (optional)
  • 1/2 cup Chopped kale or spinach leaves (optional for added veggies)
  • 2-3 tbs Olive oil

Salt and pepper to taste

Instructions
 

  • Heat stock pot on medium high heat and drizzle some olive oil. When heated, sautee mirepoix for 3-5 minutes until soften. You can turn heat to medium and sautee a few more minutes until soft.
  • Sautee kale and/or spinach (optional).
  • Turn heat back to medium high, add chicken stock.
  • Bring to low boil and add egg noodles (optional). Boil on low for a few minutes until noodles cooked.
  • Add pre-cooked chicken and simmer soup for additional 5 minutes. Add salt and pepper to taste.
  • Serve warm.
