Whole Orange Cake (Purvi, vegan)
Dense orange cake made with almond flour.

1 round cake tin (8 inch), oiled
1 small pot with 4 cups water (to boil orange)
1 food processor or Vitamix
- 1 medium-sized whole orange (about 250 g), with rind still on it
- 2.5 cups almond flour
- 1/2 cup sugar
- 1/2 cup potato starch
- 1/3 cup water
- 3 tsp baking powder (heaping spoonful)
Wash orange, remove stem. Place orange in small pot with 4 cups of water, simmer for 30 minutes until you can pierce the skin with no resistance. Drain water and allow orange to cool.
Roughly chop orange, remove any seeds. Place in food processor/Vitamix and process until pasty.
Preheat oven to 350 degrees F.
Add rest of cake ingredients to food processor/Vitamix. Process until mixture is combined and thick. (If batter is runnier, add 1 tbs potato starch).
Scoop batter into oiled cake pan, bake for about 35-40 minutes. Cake ready when skewer can be inserted into it. Cake will not rise much.
When cool, dust with powdered sugar.
