Whole Orange Cake (Purvi, vegan)
Dense orange cake made with almond flour.
Equipment
- 1 round cake tin (8 inch), oiled
- 1 small pot with 4 cups water (to boil orange)
- 1 food processor or Vitamix
Ingredients
- 1 medium-sized whole orange (about 250 g), with rind still on it
- 2.5 cups almond flour
- 1/2 cup sugar
- 1/2 cup potato starch
- 1/3 cup water
- 3 tsp baking powder (heaping spoonful)
Instructions
- Wash orange, remove stem. Place orange in small pot with 4 cups of water, simmer for 30 minutes until you can pierce the skin with no resistance. Drain water and allow orange to cool.
- Roughly chop orange, remove any seeds. Place in food processor/Vitamix and process until pasty.
- Preheat oven to 350 degrees F.
- Add rest of cake ingredients to food processor/Vitamix. Process until mixture is combined and thick. (If batter is runnier, add 1 tbs potato starch).
- Scoop batter into oiled cake pan, bake for about 35-40 minutes. Cake ready when skewer can be inserted into it. Cake will not rise much.
- When cool, dust with powdered sugar.
