Whole Orange Cake (Purvi, vegan)

Dense orange cake made with almond flour.

Equipment

  • 1 round cake tin (8 inch), oiled
  • 1 small pot with 4 cups water (to boil orange)
  • 1 food processor or Vitamix

Ingredients
  

  • 1 medium-sized whole orange (about 250 g), with rind still on it
  • 2.5 cups almond flour
  • 1/2 cup sugar
  • 1/2 cup potato starch
  • 1/3 cup water
  • 3 tsp baking powder (heaping spoonful)

Instructions
 

  • Wash orange, remove stem. Place orange in small pot with 4 cups of water, simmer for 30 minutes until you can pierce the skin with no resistance. Drain water and allow orange to cool.
  • Roughly chop orange, remove any seeds. Place in food processor/Vitamix and process until pasty.
  • Preheat oven to 350 degrees F.
  • Add rest of cake ingredients to food processor/Vitamix. Process until mixture is combined and thick. (If batter is runnier, add 1 tbs potato starch).
  • Scoop batter into oiled cake pan, bake for about 35-40 minutes. Cake ready when skewer can be inserted into it. Cake will not rise much.
  • When cool, dust with powdered sugar.
